Tuesdays with Dorie—Real Butterscotch Pudding

Real Butterscotch PuddingI love pudding. I love butterscotch pudding, but I'm still acquiring my taste for Scotch. This was a delicious, simple, smooth pudding. I used an antique mold I found awhile ago…but the pudding looks like more like a brain when unmolded.

It's Christmas, so lots to do besides writing blog posts. Here are my pictures and my endorsement. This is good puddin'!

Recipe

Ingredients for Real Butterscotch Pudding
½ cup (packed) light brown sugar
3 tablespoons water
1¾ cups whole milk
½ cup heavy cream
¼ cup cornstarch
¼ teaspoon salt
3 tablespoons sugar
3 egg yolks
3 tablespoons unsalted butter, cut into 4 pieces, at room temperature
2 teaspoons vanilla extract
2 to 3 tablespoons Scotch whisky (preferably a strong single malt)

  2. I'm also iffy on Scotch - but I loved this pudding. Maybe it's the gateway dessert? Looks gorgeous in the mold and spoon!

    I'm glad to hear that my card made it. I wasn't sure how long it would take to get from Texas to Ontario, so I mailed it as early as I could manage. =) I hope you enjoy the recipe when you have a chance to try it. And making the ornament was a good change of pace for me--I haven't gotten my tatting stuff out in forever.

  11. Hubby and I were actually debating whether this pudding was mould-able. I guess he won that one!
    We loved it too, not generally a Scotch drinker (only for bereavement for some reason), but I liked it in the pudding.
    I love your collections of baking tins and moulds.

  12. It looks like a walnut, if you don't want to see it as a brain! Whatever it looks like, it definitely looks like it's delicious. I don't think I've ever had real butterscotch pudding, only the fake stuff. That is a terrible thing, you've just made me realize! I better do something about it!

  15. Buterscotch is such a great flavor for this season... I don't know why, but it just seems like such a wintery thing. It's definitely appealing right now, that's for sure!

  16. Ooh, that is what I call a "vintage" shape! I haven't seen one of those since the Betty Crocker cookbook we had from the 60's. Awesome! Good puddin' ;P

  19. Your pudding looks so yummy on your snowflake! It does look like a half brain, half walnut in the mold though!

    So glad you liked the pudding. Too bad many people didn't even try it. Maybe I should have picked something else before Christmas but I was getting real tired of all the cookies!

  23. Scotch is a decidedly acquired taste, and I haven't exactly acquired it yet. However, it does lend a particularly earthy taste to sauteed mushrooms! The pud looks lovely Shari! Congrats!!

    But, I do love butterscotch. Not pudding so much, but, yours looks super.
